🛒 Ingredients

(Serves 3–4)

  • 4 bone-in, skin-on chicken thighs (or boneless if preferred)
  • 2 cups baby potatoes, halved
  • 1 cup chopped carrots
  • 1 red bell pepper, sliced
  • 1 small red onion, cut into wedges
  • 1½ tbsp olive oil
  • Juice and zest of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp dried rosemary
  • Salt and pepper to taste
  • Fresh parsley or lemon wedges for garnish (optional)

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  5. Place chicken thighs on top of the veggies, skin side up.
  6. Roast for 35–40 minutes, or until the chicken is golden and cooked through (165°F internal temp).
  7. Optional: Broil for 2–3 minutes for crispier skin.
  8. Sprinkle with chopped parsley or extra lemon juice before serving.
