This wrap is one of my go-to lunches when I need something fast, crunchy, and full of color. It’s basically a salad in a wrap—but way more fun to eat. The hummus gives it that creamy, satisfying layer while the veggies keep things crisp and energizing. It’s also super versatile—use whatever you have in the fridge, and don’t stress about making it perfect. Wellness is about what works, not what looks Pinterest-perfect!
🛒 Ingredients
(Makes 1 wrap)
- 1 large whole grain or gluten-free tortilla
- 2–3 tbsp hummus (classic, roasted red pepper, or your fave)
- ¼ cup shredded carrots
- ¼ cup thinly sliced purple cabbage
- ¼ avocado, sliced
- 3–4 cucumber spears or thin slices
- 1 small handful baby spinach or mixed greens
- A few thin bell pepper strips (red or yellow)
- Sprinkle of hemp seeds or sunflower seeds (optional)
- Dash of lemon juice or drizzle of balsamic (optional)
🌯 Instructions
- Lay the tortilla flat on a clean surface or plate.
- Spread hummus evenly over the center, leaving space around the edges.
- Layer the veggies in rows or piles—carrots, cabbage, cucumber, avocado, greens, and bell pepper.
- Add a squeeze of lemon juice or a drizzle of balsamic if you like a little zing.
- Sprinkle seeds on top for added texture and nutrients.
